Spicy cheese stuffed mini peppers, a healthier game day appetizer.
Ingredients:
  • 10 mini sweet peppers, sliced in half lengthwise
  • 2 teaspoons extra virgin olive oil
  • salt to taste
  • 1 (5.5 ounce) package goat cheese, softened
  • 0.33333334326744 cup grated Parmesan cheese
  • 1 medium jalapeno pepper, seeded and minced
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon dried chopped chives
  • freshly ground black pepper to taste
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Combine olive oil and salt with pepper halves in a bowl, tossing to coat evenly.
  • Combine goat cheese, Parmesan cheese, jalapeño, garlic, chives, and black pepper in a bowl, ensuring even distribution. Fill pepper halves with the cheese mixture and place on a baking sheet.
  • Bake until the peppers are tender and the cheese is golden brown, approximately 15 minutes in the preheated oven.
