Transform your fresh walleye into delicious fish patties topped with zesty dill mayo.
Ingredients:
  • 3 pounds walleye fillets
  • 0.5 cup dry white wine
  • 1 carrot, shredded
  • 1 red onion, diced
  • 1 stalk celery, diced
  • 4 cups panko bread crumbs
  • 2 cups mayonnaise
  • 1 tablespoon seafood seasoning (such as Old Bay®)
  • 2 tablespoons oil for frying, or as needed
  • 3 tablespoons lemon juice
  • 1 tablespoon chopped fresh dill
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Take walleye fillets and lay them in a baking dish, gently pour in wine, and generously season with salt and pepper. Let it bake in the preheated oven until the fish easily flakes with a fork, approximately 20 minutes. Allow the fish to cool, then break into large chunks and set aside.
  • Combine carrot, red onion, celery, panko crumbs, mayonnaise, seafood seasoning, and salt in a bowl until fully incorporated. Gently fold in the walleye to preserve the chunky texture, then shape into 12 delicious patties.
  • In a generously oiled skillet or griddle set over medium-high heat, fry the patties until they turn golden brown, about 3 to 5 minutes on each side.
  • Combine the tangy lemon juice and aromatic fresh dill with 1 cup of creamy mayonnaise in a bowl. Pour the flavorful sauce over the walleye cakes and enjoy your delicious creation.
