Mint, snow pea & cucumber salad

Ingredients:
  • 200g snow peas, topped
  • 1 medium telegraph cucumber
  • 1 bunch fresh mint
  • 1 lemon
  • 140g (1/2 cup) natural yoghurt
  • Salt & ground black pepper
Instructions:
  • In a saucepan, bring water to a boil. Add snow peas and cook for 1 minute until tender-crisp. Drain and quickly cool in cold running water, then drain well.
  • Slice the snow peas into thin strips, reserving a few for garnish, and place them in a medium bowl. Halve the cucumber lengthwise, scoop out the seeds with a teaspoon, then slice into 5cm lengths and further into 1cm-wide sticks. Set aside a mint sprig for garnish, finely chop the remaining mint leaves, and add them to the cucumber and snow peas. Combine everything by tossing.
  • Create a zesty yogurt dressing by zestng a lemon, cutting the zest into strips, and combinng with yogurt, lemon juice, salt, and pepper in a bowl. Stir until well mixed.
  • Gently mix the yogurt dressing with the snow pea mixture until coated evenly. Chill in the fridge for 30 minutes. Serve topped with reserved snow pea strips and a sprig of mint.
