Seasonal raspberry twist on classic cocktail using fresh summer raspberries.
Ingredients:
  • caster sugar
  • 8 fresh mint leaves plus a few extra to serve
  • 1 small handful of raspberries
  • ice cubes
  • 50 ml bourbon
Instructions:
  • Create a quick sugar syrup by simmering equal parts sugar and water in a saucepan over medium-low heat until sugar dissolves. Spoon 1 teaspoon into a tumbler, then muddle with mint and raspberries. Let sit for 10 minutes. Discard mint, strain into a glass, add crushed ice, pour bourbon, stir, top with more ice, and garnish with fresh mint leaves.
