Indulgent chocolate and refreshing mint create the perfect summer dessert.
Ingredients:
  • 1 Package Immaculate Baking Co.™ Gluten Free Double Chocolate Cookie Dough
  • 1 1.5 QT container of Mint Chocolate Chip Ice Cream
  • 1 cup whipped cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • mini chocolate chips
Instructions:
  • Prepare the cookie layer in advance by preheating the oven to 325°F, lining a baking dish with parchment paper, and arranging the cookie dough pieces closely together in the dish.
  • Bake the cookies for 10 minutes, or until they are soft and melted. Then, flatten them with a spatula to create a crust. Continue baking until fully cooked. Allow to cool completely before serving.
  • Soften the ice cream at room temperature until it is soft. Spread it evenly over the cookies and freeze until solid.
  • In a bowl, whip heavy cream, powdered sugar, and peppermint extract until soft peaks form. Spread the whipped cream over the ice cream, sprinkle with mini chocolate chips, and freeze for at least 3 hours until solid.
