Indulgent frozen treat blending cookies and ice cream.
Ingredients:
  • 2 pints mint chocolate chip ice cream, slightly softened
  • 1 package (6 ounces) ready-to-use chocolate-flavored pie crust
  • 1 1/4 cups crushed chocolate-covered mint cookies
  • 1 cup chocolate fudge topping
Instructions:
  • Spread a generous layer of the ice cream in the pie crust, ensuring it's smooth. Sprinkle the crushed cookies generously over the ice cream. Cover the pie and let it set in the freezer for 1 hour.
  • Smoothly layer the remaining pint of ice cream on top of the cookie base. Chill in the freezer, covered, for around 3 hours, or until the dessert reaches a firm consistency.
  • Allow the pie to come to room temperature for 10 minutes before slicing. Serve with a decadent fudge topping and garnish with the extra cookies. Any leftover pie can be covered and stored in the freezer.
