Elevate your lamb with our homemade mint jelly made with fresh mint and tart Granny Smith apples for natural pectin.
Ingredients:
  • 4 lbs of tart apples (e.g. Granny Smith), un-peeled, chopped into big pieces, including the cores (including the cores is important as this is where most of the natural pectin is)
  • 3 cups of fresh spearmint leaves, chopped, packed
  • 2 cups white vinegar
  • 3 1/2 cups sugar (7/8 cups for each cup of juice)
Instructions:
  • Prepare the jars: Sterilize 4 half-pint canning jars using your preferred method. Clean the lids and rings with hot, soapy water.
  • In a large pan, simmer apple pieces, water, and fresh mint until apples are tender, about 20 minutes.
  • Add the vinegar and let it simmer for 5 minutes with the lid on.
  • Mash the apple pieces using a potato masher until they reach a thin apple sauce consistency. If the mixture is too thick, add 1/2 to 1 cup of water to the pot until it is runny.
  • Place the apple pulp into a large, fine mesh sieve lined with muslin cloth (or a couple layers of cheesecloth) over a large bowl. Allow it to strain for several hours without squeezing. Approximately 4 cups of juice will be collected from the mash.
  • Measure the juice and pour it into a large nonreactive pot. Add the sugar (7/8 cup for each 1 cup of juice). Heat on high, stirring constantly until the sugar is dissolved.
  • Achieve gelling point: Bring mixture to a strong simmer, allowing it to boil for 10-15 minutes. Skim off any surface scum with a metal spoon. Continue boiling until a digital thermometer registers 8-10°F above the boiling point for your altitude (220-222°F at sea level), which may take an additional 10 minutes to an hour based on ingredients.
  • Transfer the mixture into canning jars, leaving a 1/4 inch space from the top, and seal tightly. This recipe yields around 4 (8-ounce) jars. Refrigerate unsealed jars for up to 6 months once cooled. If you enjoyed it, please rate the recipe and share your feedback with us!
