Minted blueberry granita

Refreshing summer berry granita made ahead for easy enjoyment.
Ingredients:
  • 600g blueberry
  • 220g caster sugar
  • 1/2 bunch mint, leaves picked, plus extra leaves to serve
  • 80ml lime juice
  • 12.00 gm icing sugar
  • 20.00 ml limoncello* liqueur (optional)
Instructions:
  • Chill a 1-litre loaf pan in the freezer. Combine 2 punnets (400g) blueberries, caster sugar, and 2 cups (500ml) water in a saucepan over low heat. Cook, stirring occasionally, for 10-12 minutes until sugar dissolves and blueberries start to break down. Stir in mint and lime juice, then allow to cool slightly.
  • After blending the blueberry mixture until smooth, strain it through a fine sieve and let it cool to room temperature. Pour the mixture into the chilled loaf pan, cover it, and freeze it overnight.
  • Coat the extra berries with powdered sugar and a splash of limoncello, if desired.
  • Serve by delicately shaving the granita with a spoon and artfully layering it in serving glasses with fresh blueberries and extra mint leaves.
