Elevate traditional pea and ham soup with a burst of flavor from fresh mint and aromatic spices.
Ingredients:
  • 20g (1 tbsp) butter
  • 1 brown onion, chopped
  • 500g (2 1/2 cups) green split peas
  • 20.00 ml dry mustard powder
  • 1kg ham bones
  • Water
  • 10 fresh mint sprigs, coarsely chopped
  • Freshly ground black pepper
  • Fresh mint leaves, to garnish
Instructions:
  • In a large saucepan over medium heat, melt butter and sauté onion for 5 minutes until soft. Rinse split peas in a strainer under cold running water until water runs clear, then drain.
  • Combine split peas and mustard powder in the saucepan. Pour in ham bones and 1.5 litres (6 cups) water, ensuring all ingredients are covered. Bring to a boil, then add mint sprigs and reduce heat to medium. Cover and simmer for 45 minutes.
  • Take off the heat and allow it to cool for a bit.
  • Take out the ham bones from the saucepan, separate the ham meat from the bones, shred the meat into bite-sized pieces, discard the bones, and set the meat aside.
  • Blend soup in batches in a food processor or blender until smooth. Return to saucepan over medium heat, stir in reserved meat, and warm through. Season with pepper to taste.
  • Serve the soup in bowls, topping with fresh mint leaves and a side of lemon pepper lavash bread.
