Minted pea couscous

Elevate your couscous with mint, cheese, and fresh peas for a unique and delicious twist.
Ingredients:
  • 500.00 gm boiling water
  • 1 chicken style stock cube, crumbled
  • 500.00 ml couscous
  • 50g snow peas, trimmed, cut into strips
  • 50g sugar snap peas, trimmed
  • 1 lime, juiced
  • 250.00 ml fresh peas, shelled
  • 40.00 ml fresh mint leaves, roughly chopped
  • 1 garlic clove, peeled, sliced
  • 20.00 ml finely grated parmesan
  • 50g low-fat feta, crumbled
  • Lime wedges, to serve
Instructions:
  • In a large heatproof bowl, effortlessly whisk together boiling water and stock until the stock has fully dissolved. Incorporate the couscous using a fork, stirring gently. Cover and let it rest for 5 minutes.
  • Blanch snow peas and sugar snap peas in salted boiling water for 1 to 2 minutes until vibrant and tender. Shock in cold water to stop cooking.
  • Fluff up the couscous with a fork to ensure each grain is separate, then mix in the cooked peas and a quarter cup of refreshing lime juice.
  • In a food processor, combine raw, shelled peas, mint, garlic, parmesan, and a pinch of salt until just mixed. Divide couscous between bowls and top with the pea puree. Sprinkle with feta and serve with lime wedges.
