Brunch-worthy fruit salad with mint - a showstopper centerpiece.
Ingredients:
  • 1 whole watermelon, about 17 inches long
  • 1 cup green grapes
  • 3 cups cantaloupe balls
  • 1/4 cup finely chopped fresh mint leaves
  • 2 tablespoons lemon juice
  • 1/4 cup sugar
  • 1 cup fresh strawberries
  • Additional fresh mint leaves
Instructions:
  • Carefully slice a thin piece from the end of the watermelon using a sharp knife, ensuring not to pierce the flesh. Stand the watermelon upright on the cut end. Use a washable marker to mark the top of the basket handle by drawing two parallel lines that are 2 1/2 inches apart, starting from the top of the watermelon and extending approximately 6 inches down each side.
  • Cut out wedge-shaped pieces of watermelon from each side while leaving the handle intact. Gently scoop out the watermelon flesh using a large spoon, ensuring to leave about 4 inches of flesh at the bottom of the watermelon.
  • Use a small knife or a garnishing tool to create "V" or scallop cuts about 2 inches apart on the cut sides and handle of the watermelon basket.
  • Prepare the watermelon by cutting it into 1-inch chunks or using a melon ball tool to create balls. Measure out 3 cups of watermelon and transfer it to a large bowl, saving the rest for later in the refrigerator.
  • Combine grapes and cantaloupe with watermelon in a bowl. Fold in 1/4 cup of fresh mint, lemon juice, and sugar gently. Chill fruit mixture and watermelon basket separately until needed. Right before serving, fill the watermelon basket with the fruit mixture and top with strawberries and extra mint leaves for a delightful presentation.
