Elevate boring beans with a flavorful mixed bean salad that pleases the whole family.
Ingredients:
  • 250g green beans, topped
  • 250g butter beans, topped
  • 60ml (1/4 cup) macadamia oil
  • 18.20 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
  • 5.00 gm caster sugar
  • 1 x 400g can borlotti beans, rinsed, drained
  • 100g walnuts, toasted
  • 40.00 ml torn fresh continental parsley leaves
Instructions:
  • Blanch the green beans and butter beans in boiling salted water for 3 minutes until tender-crisp. Drain, rinse under cold water, and pat dry with paper towels.
  • Combine the oil, vinegar, and sugar in a small bowl and whisk until well blended. Taste the mixture and season with salt and pepper to your liking.
  • Combine the dressing and borlotti beans with the green beans, tossing them together. Allow the flavors to develop by setting it aside for 2 hours.
  • Combine the walnuts and parsley, toss well, and serve.
