Mixed berry, apple and ginger crumble

Create a delicious crumble with juicy apples, oranges, and assorted berries.
Ingredients:
  • 4 large Granny Smith apples, peeled, cored, coarsely chopped
  • 1 orange, finely grated, juiced
  • 20.00 gm caster sugar
  • 1 tsp finely grated ginger
  • 60ml water
  • 350g frozen mixed berries
  • Vanilla bean ice-cream, to serve
  • 40g plain flour
  • 50g butter, chopped
  • 75g rolled oats
  • 100g brown sugar
  • 50g almond
  • 1 1/2 tsp ground cinnamon
Instructions:
  • In a large saucepan over medium heat, combine the apple, orange rind, orange juice, sugar, ginger, and water. Cook, stirring occasionally, for 15-20 minutes until the apple is tender and begins to color. Mix in the berries and remove from heat.
  • Preheat the oven to 180C. In a medium bowl, combine the flour and butter by rubbing them together with your fingertips until they resemble fine breadcrumbs. Stir in the oats, sugar, almonds, and cinnamon using your fingertips to combine thoroughly.
  • Divide the apple mixture into four 1 1/2-cup (375ml) capacity ovenproof dishes. Top with the crumble mixture and place the dishes on a tray. Bake in a preheated oven for 25-30 minutes until golden brown and heated through. Take out of the oven.
  • Serve crumbles topped with a scoop of ice cream, if desired, and enjoy right away.
