Ingredients:
  • 1 packet gluten-free vanilla tea biscuits
  • 40.00 gm butter
  • 10.00 gm cinnamon
  • 1 can sweetened condensed milk
  • 500g cream cheese
  • 65.63 gm lemon juice
  • 1 can mixed berries
  • 53.75 gm caster sugar
  • 20.00 gm gluten-free cornflour
Instructions:
  • Combine crushed biscuits with melted butter and cinnamon, press into springform tin, then refrigerate to set while preparing the filling.
  • Place half of the cream cheese in an electric mixer and blend until smooth. Add half of the condensed milk and mix. Follow with a quarter of the cream cheese, the remaining milk, and lemon juice. Mix until smooth (not runny). If too thin, add the rest of the cream cheese. Pour over the base and refrigerate to set.
  • Prepare the topping by first draining the juice of the berries into a small saucepan, reserving a quarter cup in a separate container. Heat the juice in the saucepan on low heat, then stir in the sugar until dissolved. Combine the reserved juice with cornflour to create a smooth paste. Add this mixture to the saucepan and cook until thickened. Stir in the drained berries until well combined, then let the mixture cool for 10 minutes. Pour the topping over the filling and refrigerate for 60 minutes to set.
