Indulge in a mouthwatering medley of beloved desserts for an unforgettable taste experience.
Ingredients:
  • Melted butter, to grease
  • 100g good-quality dark chocolate, chopped
  • 125ml (1/2 cup) warm water
  • 60g reduced-fat dairy spread
  • 155g (3/4 cup, firmly packed) brown sugar
  • 2 eggs, lightly whisked
  • 75g (1/2 cup) plain flour
  • 50g (1/3 cup) self-raising flour
  • 50g (1/2 cup) cocoa powder
  • 1 x 250g pkt light cream cheese
  • 240g (1 cup) low-fat ricotta
  • 55g (1/4 cup) caster sugar
  • 1 egg, extra, lightly whisked
  • 1 x 300g pkt frozen mixed berries (Sara Lee brand)
Instructions:
  • Preheat the oven to 180°C. Grease a 20 x 30cm slab pan with melted butter. In a saucepan over low heat, melt the chocolate with water and dairy spread, stirring until smooth. Remove from heat and mix in brown sugar. Let it cool for 5 minutes.
  • Combine the egg with the flours and cocoa powder, then stir until well mixed. Transfer the mixture into the prepared pan and evenly smooth the top.
  • In a bowl, blend cream cheese, ricotta, caster sugar, and extra egg using an electric beater until smooth. Gently fold in half of the berries. Pour the creamy mixture over the chocolate mixture and top with the rest of the berries.
  • Bake in the oven for 50-60 minutes until the topping is set. Let it cool at room temperature for 30 minutes, then chill in the fridge until completely cool. Cut into 24 pieces before serving.
