Mixed berry ice cream float recipe

Enjoy a refreshing mixed berry ice cream float to beat the summer heat.
Ingredients:
  • 165g caster sugar
  • 2 Earl Grey tea bags
  • 60ml lemon juice
  • 375g blackberry
  • 225g raspberry
  • 600ml vanilla ice cream
  • Chilled sparkling mineral water, to serve
Instructions:
  • Combine sugar, tea bags, and ½ cup (125ml) water in a medium saucepan over low heat. Stir and cook for 5 mins until sugar dissolves. Stir in lemon juice, 2 cups (300g) blackberries, and 1 cup (150g) raspberries. Increase heat to medium and cook for 8-10 mins until berries release juice and mixture thickens. Remove from heat, discard tea bags, and let cool slightly.
  • Blend the berry mixture in a food processor until smooth, then strain it through a fine sieve into a jug. Cover with plastic wrap and chill in the fridge for at least 3 hours.
  • Divide half of the berry syrup among serving glasses. Layer with one-third of the remaining blackberries and raspberries and add a scoop of ice cream. Repeat layering with syrup, berries, and ice cream, finishing off with berries on top. Pour mineral water over and serve promptly.
