Delightful two-berry jam with a zesty kick, a versatile companion for dessert or toast.
Ingredients:
  • 1 pouch (3 ounces) liquid fruit pectin
  • 1 cup crushed strawberries (1 pint whole berries)
  • 1 cup crushed raspberries (1 pint whole berries)
  • 4 cups sugar
  • 1/2 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
Instructions:
  • Combine the fresh berries and sugar in a spacious glass or plastic bowl. Allow the mixture to sit at room temperature for approximately 10 minutes, giving it an occasional stir, until the sugar completely dissolves.
  • Combine fragrant lemon zest, freshly squeezed lemon juice, and pectin. Stir for 3 to 5 minutes until it thickens slightly.
  • Transfer the mixture into freezer containers, ensuring to leave a 1/2-inch space at the top. Seal the containers promptly and allow them to set at room temperature for approximately 24 hours. Store in the refrigerator for up to 3 weeks, or freeze for up to 1 year (thaw in the refrigerator or at room temperature before serving). Enjoy as a spread or in desserts.
