Create stunning berry pies with frozen fruit.
Ingredients:
  • 225g (1 1/2 cups) plain flour
  • 55g (1/2 cup) hazelnut meal
  • 45g (1/4 cup) icing sugar mixture
  • 150g chilled butter, chopped
  • 1 egg yolk
  • 500g frozen mixed berries
  • 20.00 gm caster sugar
  • 100g (1 cup) Madeira cake, crumbled
  • 1 egg white, lightly whisked
  • 34.40 gm demerara sugar
  • Double cream or ice-cream, to serve
Instructions:
  • In a food processor, combine flour, hazelnut meal, icing sugar, and butter until the mixture resembles fine breadcrumbs. Add the egg yolk and process until the dough begins to come together.
  • Transfer the dough onto a lightly floured surface and knead until silky. Form into a disc, wrap with plastic, and chill in the fridge for 30 minutes to relax.
  • Preheat the oven to 200C and line a baking tray with non-stick baking paper. In a bowl, mix the berries with sugar. Divide the pastry into 4 portions and roll each out on a lightly floured surface into a 20cm disc. Sprinkle cake crumbs over the pastry discs. Divide the berry mixture among the pastry discs and fold in the edges, leaving the centers open. Press edges to seal. Place on the baking tray. Brush the pastry with egg white and sprinkle with demerara sugar.
  • Bake in the oven until the pastry is golden and cooked through, for 25-30 minutes. Place the pies in serving bowls and serve immediately with double cream or ice cream, if desired.
