Mini mixed berry mince pies

Festive fruit mince pies packed with sweet and spicy flavors!
Ingredients:
  • 225g mixed berries
  • 40.00 gm caster sugar
  • 21.00 gm lemon juice
  • 1.25 gm ground cinnamon
  • 0.63 gm mixed spice
  • Pinch ground nutmeg
  • 70g fruit mince
  • 5.00 gm cornflour
  • 3 sheets Brand short crust pastry, just thawed
  • 1 free range egg, lightly whisked
  • Icing sugar, to dust
Instructions:
  • In a bowl, mash 1/4 cup of berries. In a saucepan, combine the remaining berries, sugar, lemon juice, spices, and 2 tablespoons of water. Simmer over medium-high heat, then reduce to medium-low and cook for 5 minutes until berries start breaking down. Finally, stir in the fruit mince.
  • Mix the cornflour and 1 tablespoon of water into the mashed berries. Incorporate this mixture into the pan with the berry blend. Cook for 1 minute or until it thickens. Let it rest for 10 minutes to cool, then refrigerate to chill.
  • 1. Preheat your oven to 220C. 2. Grease a 24-hole mini muffin pan. 3. Cut 24 discs using a 5.5cm round cutter from 2 pastry sheets. 4. Line the prepared muffin pan with the pastry discs. 5. Distribute the berry mixture evenly among the pastry-lined muffin cups without overfilling them.
  • Take a 3.5cm star cutter and cut out 24 stars from the remaining pastry. Place the stars on top of the berry mixture, gently pressing to seal them. Brush the pastry with egg wash. Bake for 12 minutes or until the pastry turns golden. Allow it to cool slightly in the pan. Finish off by dusting with icing sugar before serving.
