Mini mixed berry banana breads

Delicious mini banana breads for a sweet school snack.
Ingredients:
  • 225.00 gm self-raising flour
  • 75.00 gm wholemeal self-raising flour
  • 0.63 gm bicarbonate of soda
  • 107.50 gm caster sugar
  • 75.08 gm light-flavoured extra virgin olive oil
  • 130.00 gm buttermilk
  • 260.00 gm mashed banana (see notes)
  • 250.00 ml frozen mixed berries (see notes)
Instructions:
  • Preheat your oven to 190C/170C fan-forced. Grease an 8-hole mini loaf pan (3/4-cup-capacity) and line the bases and long sides with baking paper.
  • In a large bowl, combine flours, bicarbonate of soda, and sugar. Create a well in the center. Mix eggs, oil, buttermilk, and vanilla in a separate bowl. Pour the mixture into the well along with the banana. Gently stir until just combined. Fold in 3/4 cup of berries. Fill prepared pan holes with the mixture evenly. Sprinkle the remaining berries on top.
  • Bake until golden and firm to the touch, about 20-25 minutes. Let it rest in the pan for 5 minutes, then cool on a wire rack. Store in an airtight container for up to 3 days.
