Indulge in a honey-butter glazed muesli bar for a quick, delicious breakfast or snack!
Ingredients:
  • 125g unsalted butter, chopped
  • 178.75 gm honey
  • 2 eggs, lightly beaten
  • 200.00 gm wholegrain rolled oats
  • 75.00 gm wholemeal self-raising flour
  • 5.00 gm ground mixed spice
  • 250.00 ml chopped dried apricots
  • 170.00 gm sultanas
  • 187.50 ml dried apples, chopped
  • 82.50 ml dried cranberries
  • 82.50 ml sunflower kernels
  • 82.50 ml pepitas
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced). Grease a 20cm x 30cm lamington pan with a 3cm depth. Line the base and sides with baking paper, leaving a 3cm overhang on all sides.
  • Combine butter and honey in a small saucepan over low heat until melted. Let it cool, then whisk in the eggs until combined.
  • Combine oats, flour, mixed spice, apricots, sultanas, apple, cranberries, sunflower kernels, and pepitas in a large bowl. Mix well. Add the butter mixture and stir until fully combined. Press the mixture firmly into the prepared pan and bake for 25 to 30 minutes until golden. Let it cool completely in the pan, then cut into 5cm squares and serve.
