Mixed tomato and bocconcini bruschetta

Elevate your next dinner party with this irresistible classic bruschetta.
Ingredients:
  • 4 ripe egg tomatoes, finely chopped
  • 4 ripe yellow egg tomatoes, finely chopped
  • 100g baby bocconcini, drained, coarsely torn
  • 125.00 ml finely shredded fresh basil
  • 20.00 ml balsamic vinegar
  • 10 slices ciabatta
Instructions:
  • In a bowl, mix together the tomato, bocconcini, basil, garlic, vinegar, and half of the oil. Season with salt and pepper to taste.
  • Preheat the barbecue or chargrill on high heat. Brush both sides of the ciabatta with the remaining oil and grill for 1-2 minutes per side until golden and toasted.
  • Distribute the tomato mixture evenly on the ciabatta and display them on a serving platter for serving.
