Mixed-Mushroom Stroganoff

Try this quick and delicious mushroom stroganoff for a meatless Russian-inspired dinner in just 25 minutes.
Ingredients:
  • 1/4 cup margarine or butter
  • 2 cloves garlic, finely chopped
  • 1 large onion, sliced and separated into rings
  • 1 pound assorted mushrooms (such as button, crimini, oyster and portabella), sliced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried sage leaves
  • 1/2 teaspoon salt
  • 1 cup vegetable or chicken broth
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 cup sour cream
  • 6 cups hot cooked egg noodles
  • Chopped fresh parsley
Instructions:
  • In a large skillet, melt margarine over medium-high heat. Sauté garlic, onion, and mushrooms until vegetables are tender, stirring occasionally. Add parsley, sage, and salt.
  • Combine the broth and flour, then stir it into the mushroom mixture. Bring it to a boil and continue boiling while stirring constantly until it thickens; then reduce the heat to low.
  • Gently fold in sour cream without boiling. Serve over noodles and sprinkle with parsley.
