Mocha ice-cream sundaes

Quick and simple recipe for a delicious sweet treat.
Ingredients:
  • 60ml coffee
  • 63.13 gm thickened cream
  • 100g dark chocolate, chopped
  • 8 scoops vanilla ice-cream
  • 125.00 ml mini white marshmallows
  • Mini chocolate wafer sticks, to serve
Instructions:
  • In a microwave-safe bowl, mix espresso and cream. Stir in chocolate. Microwave on MEDIUM (50%) for 2 minutes, pausing to stir halfway through, until smooth. Let it cool for 2 minutes before using.
  • In serving glasses, layer half of the ice cream, followed by half of the chocolate sauce, and half of the marshmallows. Repeat the layers. Top with wafers before serving.
