Indulge in heavenly coffee-chocolate ice cream bliss.
Ingredients:
  • 62.50 ml instant espresso coffee powder
  • 20.00 gm caster sugar
  • 126.25 gm thickened cream
  • 100g dark chocolate, chopped
  • 2 litres chocolate ice-cream
Instructions:
  • In a saucepan over medium heat, combine coffee, sugar, and cream. Stir continuously for 4 to 5 minutes until the sugar and coffee have dissolved. Let it cool completely.
  • Gently mix coffee mixture and chocolate into softened ice-cream. Transfer the mixture back into the tub, or if preferred, into a greased and lined 22cm round springform pan or 7cm-deep, 10cm x 20cm (base) loaf pan. Smooth the surface and cover with plastic wrap to prevent ice crystals. Freeze overnight until firm. Let the ice-cream sit at room temperature for 5 minutes before serving.
