Enhance chocolate cake with coffee for a decadent mocha treat perfect for parties.
Ingredients:
  • 1 cup buttermilk
  • 3 cups sifted cake flour
  • 0.25 cup cocoa powder
  • 1 cup unsalted butter, softened
  • 2.5 cups white sugar
  • 1 tablespoon strong brewed coffee
  • 2 teaspoons strong brewed coffee
  • 2 teaspoons vanilla extract
  • 5 large egg whites
  • 0.5 cup unsalted butter, softened
  • 2 tablespoons unsweetened cocoa powder
  • 4.5 cups sifted powdered sugar
  • 1 large egg yolk, beaten
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and flouring them.
  • Mix baking soda in tangy buttermilk until dissolved. In another bowl, blend flour, cocoa powder, and salt.
  • In a mixing bowl, whip creamy butter, slowly add sugar, then mix in alternating flour and buttermilk, stirring after each addition. Finish by gently folding in 1 tablespoon plus 2 teaspoons of coffee and vanilla.
  • Whip egg whites in a glass, metal, or ceramic bowl until stiff peaks form, then gently fold into the creamed mixture. Transfer batter to the prepared cake pans.
  • Bake in the oven until a toothpick comes out clean, for 30 to 35 minutes. Allow to cool in pans for 10 minutes, then gently loosen edges with a knife and invert onto a plate or rack. Let cool for an additional 20 minutes.
  • As the cake cools, cream together butter and cocoa powder in a bowl until smooth. Mix in powdered sugar, egg yolk, and vanilla until creamy.
  • Layer the 3 cake rounds, sandwiching them with frosting, and generously frost the top of the cake.
