Decadent coffee cake with layers of nutty streusel, rich chocolate chips, and coffee flavors.
Ingredients:
  • 2/3 cup miniature semisweet chocolate chips
  • 1/2 cup chopped pecans
  • 1/3 cup packed brown sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 tablespoon instant coffee granules or crystals
  • 2 3/4 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 cup granulated sugar
  • 1 cup butter or margarine, softened
  • 1/2 teaspoon almond extract
  • 3 eggs
  • 1 container (8 oz) sour cream
Instructions:
  • Preheat oven to 350°F and grease a 10-inch angel food (tube) cake pan with cooking spray. Combine all streusel ingredients in a small bowl and set aside.
  • Mix 2 3/4 cups of flour, along with the baking powder, cinnamon, baking soda, and salt in a separate small bowl; set aside.
  • In a large bowl, use an electric mixer to cream together granulated sugar and butter until light and fluffy, scraping the bowl as needed. Mix in almond extract. Then, add eggs one at a time, beating well after each addition. Gradually add half of the flour mixture and mix on low speed until just combined. Mix in sour cream until well incorporated, then add the remaining flour mixture and mix until combined.
  • Pour half of the batter into the pan and spread it evenly. Sprinkle half of the streusel on top, then add the remaining batter and finish with the rest of the streusel.
  • Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan on a rack for 1 hour before removing it.
