Delicious Japanese cakes made with glutinous rice flour, featuring a chewy outer layer and sweet red bean paste filling.
Ingredients:
  • 1 cup sweetened red bean paste
  • 1 cup glutinous rice flour
  • 1 teaspoon green tea powder (matcha)
  • 1 cup water
  • 0.25 cup white sugar
  • 0.5 cup cornstarch, for rolling out the dough
Instructions:
  • Prepare all of your ingredients.
  • Wrap the red bean paste in aluminum foil and chill in the freezer until firm, for at least 1 hour.
  • Thoroughly combine glutinous rice flour and green tea powder in a microwave-safe bowl.
  • Combine water and sugar, stirring until mixture is smooth.
  • Seal the bowl with plastic wrap and heat in the microwave for 3 minutes and 30 seconds.
  • Take the red bean paste out of the freezer and shape it into 8 uniform balls. Let's move on to the next step.
  • Take out the rice flour mixture from the microwave, give it a good stir, and heat it covered for an additional 15 to 30 seconds.
  • Sprinkle cornstarch on a clean surface. Shape 2 tablespoons of warm rice flour mix into a ball. Flatten it and encase a red bean paste ball inside. Mold the dough around the paste until fully enclosed.
  • Coat with extra cornstarch and place mochi, seam-side down, in a paper muffin liner for easy release.
  • Prepare additional mochi using the same method as in Step 6.
  • Savor every bite!
