Ingredients:
  • 200g (1 1/3 cups) glutinous rice flour
  • 110g (1/2 cup) raw caster sugar
  • ½ tsp sea salt
  • 200ml coconut cream
  • 100ml thickened cream
  • 20g butter, melted
  • 1 lemon, rind finely grated, juiced
  • Icing sugar mixture, to dust
Instructions:
  • In a large bowl, combine rice flour, sugar, and salt by whisking together.
  • Combine the egg, coconut cream, cream, butter, lemon rind, and 2 tbsp lemon juice, whisk well, then let it rest for 30 minutes.
  • - Preheat the oven to 190C (170C fan forced) and grease twelve 125ml (1/2 cup) silicone muffin pans. - Fill each pan with ¼ cup of the mixture. - Bake for 35-40 minutes until the muffins are soft when lightly pressed and thoroughly cooked. - Allow them to cool to room temperature before dusting with icing sugar and serving.
