Tasty new chicken dish to impress guests.
Ingredients:
  • 40.00 ml plain flour
  • 40.00 ml Moroccan seasoning
  • 8 (110g each) chicken lovely legs
  • 18.20 gm olive oil
  • 2 red onions, halved, sliced
  • 3 garlic cloves, crushed
  • 255.00 gm chicken style liquid stock
  • 1 lemon
  • 150g green beans, trimmed
  • 82.50 ml pitted green olives, halved
  • Couscous, to serve
  • Toasted slivered almonds, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • Combine flour, seasoning, and chicken in a large snap-lock bag. Seal the bag and shake to coat the chicken. Heat half of the oil in a large, heavy-based frying pan over high heat. Cook the chicken in batches, turning occasionally, for 3 to 4 minutes or until browned all over. Transfer the chicken to a plate.
  • Once the chicken is set aside, sauté the onion and garlic in the remaining oil until softened, stirring occasionally for about 5 minutes. Bring the chicken back to the pan, pour in the stock and 1/2 cup of cold water, then cover and simmer over medium-low heat for 15 minutes until the sauce slightly thickens.
  • 1. Zest the lemon and squeeze out 1 tablespoon of juice. Combine lemon zest, 1 tablespoon lemon juice, beans, and olives in a pan. Cover and cook for 10 minutes until the chicken is fully cooked. Uncover, raise the heat to medium-high, and simmer for 2 minutes until the sauce thickens.
  • Garnish tagine with a flavorful mix of couscous, almonds, and fresh coriander.
