Easy and versatile microwave mochi recipe using sweet rice flour, perfect for a delightful Japanese dessert with endless flavor possibilities.
Ingredients:
  • 1.5 cups mochiko (glutinous rice flour)
  • 1.5 cups water
  • 1.25 cups white sugar, divided
  • 2 drops distilled white vinegar
  • 0.5 cup potato starch
  • 0.25 teaspoon salt
Instructions:
  • Combine mochiko, water, and 1 cup sugar in a medium bowl until fully incorporated. Add vinegar to tenderize the mixture. Transfer to a microwave-safe dish, cover loosely with plastic wrap, and microwave on high for 8 to 10 minutes. Allow it to cool to a comfortable temperature before proceeding.
  • In a small bowl, mix together potato starch, 1/4 cup sugar, and salt. Place the mochi on plastic wrap and slice into 25 pieces using a plastic or wooden knife (avoid metal knives as they stick). Coat the pieces with the potato starch mixture.
