Elevate your weeknight meal with a simple, yet sweet finish.
Ingredients:
  • 112.50 gm self-raising flour, sifted
  • 20.00 gm cocoa powder, sifted
  • 2.00 tsp instant espresso coffee powder
  • 107.50 gm caster sugar
  • 60g butter, melted
  • 128.75 gm milk
  • Double cream, to serve
  • 5.00 gm cornflour
  • 45.00 gm brown sugar
  • 187.50 gm boiling water
Instructions:
  • In a bowl, mix together flour, cocoa powder, espresso powder, caster sugar, butter, and milk until smooth. Divide the mixture evenly into four 1 1/4 cup-capacity heatproof, microwave-safe dishes.
  • Prepare the sauce by whisking together cornflour, cocoa powder, espresso powder, brown sugar, and boiling water until smooth. Drizzle the sauce evenly over the batter in each dish.
  • Arrange dishes on the microwave turntable. Heat on MEDIUM-HIGH (75%) for 5 minutes or until the tops are firm to the touch. Allow to rest for 1 minute, then add a dollop of cream and serve.
