Mocha mascarpone with biscotti

Ingredients:
  • 2 tsp instant coffee powder or granules
  • 40.00 gm caster sugar
  • 40.00 gm boiling water
  • 1 55g bar Club dark chocolate (Nestle brand), grated
  • 250g mascarpone cheese
  • 1 egg white
  • 16 almond biscotti (Unibic brand)
Instructions:
  • In a cup, mix the coffee, sugar, and boiling water until the coffee and sugar dissolve. Let it cool slightly.
  • Set aside 1 tablespoon of the grated chocolate. Combine the coffee mixture, remaining grated chocolate, and mascarpone cheese in a large bowl, then mix with a wooden spoon until combined.
  • Beat the egg white in a small bowl until soft peaks form using an electric mixer or whisk. Gently fold the egg white into the mascarpone mixture. Transfer the mixture into serving dishes or glasses and garnish with the reserved grated chocolate. Serve with biscotti on the side.
