Indulge in this decadent low-fat pudding for under $1 per serving!
Ingredients:
  • 20.00 gm boiling water
  • 4.00 tsp instant coffee granules
  • Olive oil spray
  • 150g (1 cup) self-raising flour
  • 20.00 gm cocoa powder
  • 70g (1/3 cup) caster sugar
  • 185ml (3/4 cup) skim milk
  • 4.40 gm vanilla essence
  • 60g reduced-fat dairy spread, melted, cooled
  • 10.00 gm cocoa powder
  • 300ml boiling water
Instructions:
  • Preheat the oven to 180°C. Stir together water and coffee in a cup until the coffee dissolves. Let it cool. Grease six 150ml-capacity ovenproof tea cups or ramekins with oil spray.
  • In a large bowl, gently sift together the flour and cocoa powder, then mix in the sugar.
  • Combine the coffee mixture, milk, egg, vanilla, and dairy spread in a bowl and whisk until smooth. Gently fold the coffee mixture into the flour mixture until just combined. Spoon the batter into the prepared cups or ramekins.
  • For the sauce, mix sugar and cocoa powder in a small bowl. Sprinkle it evenly over the puddings. Combine coffee with water until dissolved. Pour the coffee mixture evenly over the puddings. Bake for 20 minutes or until set. Let it cool for 5 minutes, then dust with icing sugar.
