Mocha self-saucing pudding

Quick and easy self-saucing puddings with simple ingredients.
Ingredients:
  • Melted butter, to grease
  • 150g (1 cup) self-raising flour
  • 20.00 gm cocoa powder
  • 125ml (1/2 cup) milk
  • 1 egg
  • 70g butter, melted, cooled
  • 80g (1/2 cup, lightly packed) brown sugar
  • 20.00 gm cocoa powder, extra, sifted
  • 375ml (1 1/2 cups) boiling water
  • 20.00 ml instant coffee granules
  • Double cream, to serve
Instructions:
  • Preheat your oven to 180°C. Grease a 1.5L (6-cup) ovenproof dish with delicious melted butter and place it on a lined baking tray for easy clean-up. In a bowl, sift together flour and cocoa, then stir in caster sugar.
  • Combine milk, egg, and butter in a jug and whisk until smooth. Mix this into the flour mixture using a wooden spoon until the batter is smooth. Pour the batter into a prepared dish and use the back of a spoon to even out the surface to ensure even cooking of the pudding.
  • Prepare the sauce by mixing brown sugar and extra cocoa, then evenly sprinkle over the pudding mixture. Next, combine boiling water and coffee in a jug. Slowly pour this mixture over the back of a spoon onto the pudding to ensure it rises evenly.
  • Bake for 40 minutes or until the top forms a cake-like texture and a skewer inserted halfway into the center comes out clean, being careful not to pierce through to the bottom.
  • Allow the pudding to rest for 5 minutes to thicken the sauce beneath the cake-like surface. For optimal flavor, serve the pudding hot to prevent the cake from absorbing too much sauce.
