Minty salad inspired by mojitos, bursting with fresh fruit flavors.
Ingredients:
  • 1 cup cubed seeded watermelon
  • 1 cup seedless grapes
  • 1 cup cubed cantaloupe
  • 1 cup hulled and quartered strawberries
  • 1 cup peeled and quartered kiwi
  • 1 cup fresh blueberries
  • 3 sprigs fresh mint
  • 2 teaspoons white sugar
  • 3 tablespoons fresh lime juice
Instructions:
  • Combine the watermelon, grapes, cantaloupe, strawberries, and kiwi in a bowl with a secure lid, then layer the blueberries on top.
  • Mix the mint, sugar, and lime juice in a bowl, muddling the mint with a spoon to release the flavors; pour over the fruit. Cover the bowl and chill in the fridge for at least 1 hour.
  • Toss the fruit in the dressing by gently flipping the sealed bowl before serving.
