Mojito Loaf Cake

Mojito-inspired loaf cake with mint, lime, and rum for a taste of Cuba in every bite.
Ingredients:
  • 0.75 cup white sugar
  • 2 limes, zested
  • 1 tablespoon minced fresh mint
  • 3 tablespoons fresh lime juice
  • 2 tablespoons rum
  • 1 cup plain yogurt
  • 0.75 cup grapeseed oil
  • 2 eggs
  • 2.25 cups all-purpose flour
  • 3 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 cup powdered sugar
  • 4 large mint leaves, torn
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a loaf pan by greasing and flouring it or lining it with parchment paper.
  • In a medium bowl, mix sugar, lime zest, and mint, rubbing them together until fragrant. Add lime juice and rum, whisk until dissolved, then whisk in yogurt, oil, and eggs.
  • In a large bowl, combine flour, baking powder, and salt. Gradually incorporate the wet ingredients until the mixture is smooth. Transfer the batter to the prepared pan.
  • Bake in the preheated oven for about 50 minutes until golden brown and a toothpick inserted into the center comes out clean. If the loaf starts browning too quickly, tent with foil.
  • Allow the cake to cool in the pan for 5 to 10 minutes, then gently invert it onto a cooling rack set over a baking sheet.
  • While the loaf is cooling, make the glaze. In a small saucepan over low heat, whisk together powdered sugar, lime juice, and mint leaves until the glaze is smooth and the mint has wilted, about 5 minutes. Remove from heat and stir in rum until fully combined.
  • Pour the glaze through a strainer into a measuring cup with a spout, making sure to press on the mint leaves to extract maximum flavor. Allow it to sit until it slightly thickens, approximately 5 minutes.
  • Drizzle the glaze over the cake as it cools, allowing any extra to flow down the sides. Allow the loaf to cool completely and the glaze to set before cutting into slices.
