Molasses Cake

Delicious cake can be enjoyed warm with ice cream, cream cheese frosting, or on its own.
Ingredients:
  • 0.5 cup shortening
  • 0.5 cup packed brown sugar
  • 1 cup molasses
  • 1 teaspoon ground ginger
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup hot, brewed coffee
Instructions:
  • Combine the salt, cinnamon, cloves, ginger, flour, and baking soda through a fine sieve to ensure they are well-mixed.
  • Gradually blend shortening and sugar until creamy, then add molasses and eggs. Fold in sifted ingredients. Gently mix in hot coffee; batter will be thin.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes, then allow to cool.
