Kid-friendly molasses cookies - soft and simple to make!
Ingredients:
  • 0.75 cup shortening
  • 1 cup packed brown sugar
  • 0.5 cup light molasses
  • 2.5 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 0.5 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
Instructions:
  • Combine the shortening and brown sugar until creamy. Add the egg and molasses, mixing well. Gently fold in the dry ingredients and stir until combined. Cover the mixture and chill in the refrigerator until firm (1 - 2 hours).
  • Preheat oven to 350°F (175°C).
  • Shape dough into small balls using a small melon baller for uniform size, then coat in white sugar before placing on lightly greased cookie sheets.
  • Bake for 9-10 minutes until just set, then let cool on the baking sheet for one minute.
