Mom's Homemade Chicken Soup

Indulge in a hearty homemade chicken and veggie soup, simmered to perfection for a delicious and comforting meal.
Ingredients:
  • 1 pound boneless, skinless chicken breast halves, cut into 1-inch pieces
  • 1 medium stalk celery, chopped (1/2 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 1/2 cups baby-cut carrots
  • 1 tablespoon chicken bouillon granules
  • 1 teaspoon dried thyme leaves
  • 1 can (49 1/2 ounces) ready-to-serve chicken broth
  • 1 cup frozen green peas
  • 1 cup fine egg noodles
Instructions:
  • In a 10-inch skillet, heat oil over medium-high heat. Sear chicken, stirring occasionally, until it turns golden brown.
  • Combine all ingredients, excluding peas and noodles, in a 3 1/2- to 4-quart Crock-Pot slow cooker.
  • Slow cook covered for 6 1/2 to 7 hours until veggies are tender and chicken is fully cooked.
  • Thaw frozen peas under cold running water. Combine peas and noodles into the soup. Cover and cook on high heat for approximately 15 minutes until noodles are tender.
