Family favorite mom's lasagna with homemade meaty tomato sauce, cheesy filling, and gooey mozzarella topping.
Ingredients:
  • 0.5 pound ground pork
  • 0.5 pound lean ground beef
  • 0.5 cup minced onion
  • 1 (28 ounce) can crushed tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 tablespoons chopped fresh parsley, divided
  • 1 clove garlic, crushed
  • 1.5 teaspoons dried basil
  • 1.5 teaspoons salt
  • 0.5 teaspoon dried oregano
  • 0.125 teaspoon white sugar
  • 1 (16 ounce) package lasagna noodles
  • 1 pound small-curd cottage cheese
  • 0.75 cup grated Parmesan cheese
  • 3 large eggs
  • 2 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 1 (16 ounce) package shredded mozzarella cheese
Instructions:
  • In a large, deep skillet over medium-high heat, sauté the pork and ground beef until browned and crumbly for 5 to 7 minutes. Add the onion and cook until translucent, about 5 minutes.
  • Add crushed tomatoes, tomato sauce, 1 tablespoon of fresh parsley, garlic, basil, salt, oregano, and sugar to the mixture. Simmer on medium-low heat for 30 minutes, stirring occasionally.
  • While the sauce simmers, boil a large pot of lightly salted water. Cook lasagna noodles until al dente, about 8 to 10 minutes. Drain and set aside.
  • As the noodles cook, preheat the oven to 375°F (190°C).
  • Combine cottage cheese, Parmesan cheese, eggs, 1 tablespoon fresh parsley, salt, and pepper in a large bowl, mixing until well combined.
  • Prepare the lasagna: Begin by spreading a generous spoonful or two of sauce to thinly coat the bottom of a 9x13-inch baking dish. Top the sauce with a double layer of noodles. Layer on half of the cheese mixture, followed by half of the remaining sauce, and half of the mozzarella. Repeat the layers one more time using up all the noodles, cheese mixture, sauce, and mozzarella. Finally, cover the baking dish with aluminum foil.
  • Bake in the preheated oven for 30-40 minutes. Uncover and bake until the cheese turns golden brown, another 5-10 minutes.
  • Allow the dish to rest for 10 minutes after baking, then slice and present.
