Whip up easy, homemade lasagna noodles with just 4 simple ingredients: Italian flour, eggs, salt, and water.
Ingredients:
  • 2.25 cups Italian-style tipo 00 flour, plus additional for dusting
  • 3 large eggs
  • 1 tablespoon water as needed
Instructions:
  • Prepare all your fresh and flavorful ingredients.
  • Spread flour over a beautiful marble or wooden work surface, create a well in the center, and crack in the eggs. Sprinkle in the salt.
  • Whisk eggs with a fork until smooth and runny, then fold in flour until dough forms. Use a bench scraper to gather any remaining flour until a ball of dough forms. If needed, add water 1 tablespoon at a time to soften the dough.
  • Using your hands, gently flatten and stretch the dough, then fold the top towards the center. Rotate the dough 45 degrees and continue this process until the dough becomes soft and smooth, approximately 10 minutes.
  • Form dough into a ball, then chill in a covered bowl for 30 minutes to 1 hour until firm in the fridge.
  • Divide the dough into 3 equal portions. Take one portion and gently flatten it with your hands. Dust a work surface with flour and roll out the dough using a rolling pin, rotating and rolling 5 to 6 times each time, until very thin and translucent enough to see your fingers through.
  • Using a pastry wheel or knife, cut the pasta dough into rectangular sheets to fit your baking dish. Place the lasagna sheets on a floured kitchen towel and allow them to air-dry for approximately 30 minutes before assembling.
