Homemade lasagna beats store-bought any day!
Ingredients:
  • 1 lb bulk Italian pork sausage
  • 1 medium onion, chopped (1/2 cup)
  • 1 clove garlic, crushed
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
  • 1 teaspoon sugar
  • 2 cups Muir Glen™ organic diced tomatoes (from 28-oz can), undrained
  • 1 can (15 oz) Muir Glen™ organic tomato sauce
  • 12 uncooked lasagna noodles (12 oz)
  • 1 container (15 oz) ricotta cheese or small-curd cottage cheese (2 cups)
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh oregano leaves or 1 1/2 teaspoons dried oregano leaves
  • 2 cups shredded mozzarella cheese (8 oz)
Instructions:
  • In a skillet, sizzle sausage, onion, and garlic over medium heat until sausage is cooked through; remember to drain excess grease.
  • Combine 2 tablespoons of fresh parsley, along with the fragrant basil, sugar, ripe tomatoes, and tomato sauce in the pot. Bring to a gentle boil, stirring occasionally. Lower the heat and let it simmer uncovered for approximately 45 minutes until it thickens slightly.
  • Preheat oven to 350°F. Prepare noodles according to package instructions.
  • Combine creamy ricotta cheese with a flavorful blend of 1/4 cup Parmesan, a touch of fresh parsley, and aromatic oregano in a medium bowl.
  • Spread a layer of sauce mixture in a 13x9-inch (3-quart) glass baking dish. Lay down 4 noodles. Top with a layer of cheese mixture, followed by sauce mixture. Sprinkle with mozzarella cheese. Repeat layering with noodles, cheese mixture, sauce mixture, and mozzarella cheese. Finish with a final layer of noodles and sauce. Top with mozzarella and Parmesan cheese.
  • Cover and bake for 30 minutes until bubbly. Uncover and continue baking for an additional 15 minutes until hot. Allow to rest for 15 minutes before slicing.
