Italian Sausage Lasagna (lighter recipe)

Satisfyingly light and flavorful twist on classic lasagna.
Ingredients:
  • 1 lb bulk reduced-fat Italian pork sausage
  • 1 medium onion, chopped (1/2 cup)
  • 1 clove garlic, finely chopped
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
  • 1 teaspoon sugar
  • 2 cups Muir Glen™ organic diced tomatoes (from 28-oz can), undrained
  • 1 can (15 oz) Muir Glen™ organic tomato sauce
  • 12 uncooked lasagna noodles (12 oz)
  • 1 container (15 oz) reduced-fat ricotta cheese or small-curd cottage cheese (2 cups)
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves
  • 2 cups shredded reduced-fat mozzarella cheese (8 oz)
Instructions:
  • In a 10-inch skillet, sauté the sausage, onion, and garlic over medium heat until the sausage is fully cooked; then drain any excess fat.
  • Combine 2 tablespoons of parsley with basil, sugar, tomatoes, and tomato sauce in a saucepan. Bring to a boil, stirring occasionally. Reduce heat, simmer uncovered for about 45 minutes until slightly thickened.
  • Preheat oven to 350°F and prepare noodles according to package instructions.
  • Combine ricotta cheese, 1/4 cup Parmesan cheese, fresh parsley, and oregano in a medium bowl.
  • Layer the sauce mixture in an ungreased 13x9-inch (3-quart) glass baking dish, starting with 1 cup of sauce. Add a layer of 4 noodles. Spread 1 cup of the cheese mixture over the noodles, followed by another cup of sauce. Sprinkle with 2/3 cup mozzarella cheese. Repeat these layers twice. Top with the remaining noodles and sauce mixture. Finish with a sprinkle of the remaining mozzarella cheese and 1/4 cup Parmesan cheese.
  • Cover and bake for 30 minutes until the ingredients meld together perfectly. Uncover and bake for an additional 15 minutes until the dish is hot, bubbly, and irresistible. Allow it to stand for 15 minutes before cutting into it for the best flavor.
