Savory mung bean soup with chicken broth, prawns, and diced pork.
Ingredients:
  • 0.5 pound raw mung beans
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 0.25 pound boneless pork loin, cut into 1-inch cubes
  • salt and ground black pepper to taste
  • 0.25 pound peeled and deveined prawns
  • 1 small tomato, diced
  • 3 cups chicken broth, or more as needed
  • 0.5 pound fresh spinach leaves
Instructions:
  • In a pot, simmer the mung beans in water until soft, about 40 minutes. Mash the beans and set aside.
  • In a large pot, heat olive oil over medium heat. Sauté onion and garlic until softened, about 5-7 minutes. Add pork, season with salt and pepper, and cook for an additional 3 minutes. Stir in prawns and cook for 2 more minutes. Add tomatoes and cook for 3 minutes. Reduce heat, pour in chicken broth, and simmer for 5 minutes.
  • Stir in the mashed beans, ensuring they are well incorporated. Simmer for 5 minutes, stirring often to avoid sticking. If the soup is too thick, adjust consistency with additional chicken broth or water. Finally, add the spinach leaves, cook for 2 more minutes, and serve piping hot.
