Savory monkfish with mushrooms, tomatoes, and garlic, perfect over rice or pasta!
Ingredients:
  • salt and pepper to taste
  • Cajun seasoning to taste
  • 0.5 cup all-purpose flour
  • 1.5 pounds monkfish fillets, roughly chopped
  • 2 tablespoons olive oil
  • 0.25 cup butter
  • 3 cloves garlic, minced
  • 1 large tomato, diced
  • 1 (8 ounce) package sliced fresh mushrooms
  • 0.25 cup dry white wine
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Combine salt, pepper, Cajun seasoning, and flour in a resealable plastic bag. Add monkfish, seal the bag, and shake to coat evenly.
  • In a skillet over medium heat, heat oil and melt butter. Add monkfish and cook for 3 minutes. Stir in garlic, tomato, and mushrooms, continue cooking for 3 minutes. Add wine and parsley, cook and stir for 2 minutes until monkfish flakes easily with a fork.
