Monkfish with spinach & feta

Ingredients:
  • 1 teaspoon cumin seeds
  • 2 x 150 g monkfish fillets from sustainable sources
  • 2 sprigs of fresh thyme
  • 200 g spinach
  • 50 g feta cheese
  • ½ a lemon
Instructions:
  • Sprinkle cumin seeds over monkfish fillets, followed by thyme leaves, and season well. Fry fish in oil for 3 to 4 minutes per side until cooked through. Blanch spinach in boiling salted water for 3 minutes, then drain and drizzle with oil. Serve monkfish sprinkled with feta and a squeeze of lemon juice alongside spinach.
