Indulge in irresistible Monster Cookie Pancakes with peanut butter and double the chocolate for the ultimate breakfast treat!
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup quick-cooking oats
  • 3 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon sea salt
  • 0.125 teaspoon ground cinnamon, or to taste
  • 0.5 cup peanut butter
  • 0.25 cup butter
  • 1.3333333730698 cups buttermilk
  • 1 large egg
  • 0.33333334326744 cup chocolate chips
  • 0.25 cup peanut butter
  • 0.25 cup confectioners sugar, or more to taste
  • 0.125 teaspoon sea salt
  • cooking spray
  • 0.33333334326744 cup candy-coated milk chocolate pieces (such as M&M's®)
Instructions:
  • In a large bowl, mix together flour, oats, brown sugar, baking powder, baking soda, 1/2 teaspoon salt, and cinnamon until well combined.
  • In a large microwave-safe liquid measuring cup, combine 1/2 cup peanut butter and 1/4 cup butter. Microwave for 30 seconds until melted. Whisk in buttermilk and egg. Add this mixture to the flour mixture and stir until just combined. Gently fold in chocolate chips and let the batter rest for 5 minutes.
  • Create a luscious peanut butter sauce by combining 1/4 cup peanut butter and 1/4 cup butter in a large microwave-safe liquid measuring cup. Microwave for 30 seconds. Whisk in confectioners' sugar and 1/8 teaspoon salt until smooth.
  • Begin by warming a spacious nonstick skillet on low heat and spraying it with cooking spray. Add 1/3 cup of batter to the skillet and spread it into a circle slightly over 1/4-inch thick using the back of a spoon. Sprinkle with candy-coated chocolate pieces and cook until the edges are firm, about 2 to 3 minutes. Flip the pancake and cook for an additional 1 to 2 minutes. Place the pancake on a plate and drizzle with peanut butter sauce, then add more chocolate candies on top.
