Monterey Jack, Poblano and Mushroom Quesadillas

Satisfying mushroom and cheese quesadillas with rich umami flavor. Quick and easy to make in just 30 minutes. Perfect for family dinners or game day snacks. Everyone will be asking for more!
Ingredients:
  • 1 1/3 cups shredded Mexican cheese blend
  • 1 tablespoon vegetable oil
  • 2 poblano chiles, seeded, finely chopped
  • 1 large onion, finely chopped (1 cup)
  • 1 package (8 oz) sliced fresh mushrooms (about 3 cups)
  • 8 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count)
Instructions:
  • Heat oil in a 10-inch skillet over medium heat. Sauté chiles, onion, and mushrooms for 10 minutes, stirring frequently, until tender.
  • Evenly distribute the vegetable mixture onto 4 tortillas. Sprinkle each with a generous 3 tablespoons of cheese, then place the remaining tortillas on top.
  • 1. Wipe the skillet clean with paper towels, then spray it with cooking spray and heat over medium heat. 2. Place a quesadilla in the skillet and cook for 1 to 2 minutes until golden brown on the bottom. Flip and cook for another 1 to 2 minutes until golden brown and cheese is melted. 3. Transfer the quesadilla to a serving platter, cover to keep warm, and repeat with the remaining quesadillas.
