Gooey cream cheese and Monterey Jack filled turkey-stuffed poblano peppers, a beloved family dish.
Ingredients:
  • 1 pound ground turkey
  • 1 (4 ounce) can chopped green chilies
  • 2 teaspoons taco seasoning mix
  • 4 ounces cream cheese
  • 0.5 cup salsa
  • 2 green onions, chopped
  • 1 pinch salt
  • 3 ounces shredded Monterey Jack cheese
  • 4 poblano peppers
Instructions:
  • Preheat a large skillet over medium-high heat. Brown and crumble the turkey for 5 to 7 minutes. Drain excess grease. Add green chiles and taco seasoning. Drop in spoonfuls of cream cheese and mix into the meat. Stir in salsa and green onions. Season with salt. Simmer until bubbly, approximately 2 minutes. Mix in Monterey Jack cheese and cook until melted, around 3 minutes.
  • Position the oven rack 6 inches away from the heat source and preheat the broiler. Cover a baking sheet with aluminum foil.
  • Arrange the peppers on the baking sheet and broil until the skin is charred and blistered, about 5 to 8 minutes. Remove the peppers and preheat the oven to 350 degrees F (175 degrees C).
  • Transfer the charred peppers into a zip-top bag to steam as they cool for approximately 15 minutes. Remove the skins gently, ensuring not to rip the peppers, then slice down one side and deseed.
  • Fill the peppers with the stuffing and arrange them in a baking pan.
  • Place in the oven and bake for 20 minutes until golden brown and delicious.
